ETHEREAL CEREAL

TA! DA! Here is one of the most requested recipes from Hovey House. Guests say it is the best granola they've ever tasted. This recipe makes a big, big batch. Divide it up in zip lock bags and freeze or give as gifts.

Oven: 350°

1 large box (42 oz.) Old Fashion oats
1 cup honey
1 cup packed brown sugar
1 1/2 tsp. salt
3/4 cup vegetable oil (canola, peanut, grapeseed, etc.)
1 pkg. (7 oz.) shredded coconut
1 cup EACH chopped walnuts, pecans, sliced almonds
1 cup EACH toasted, salted sunflower seeds, sesame seeds, wheat germ

Stir all together and spread out in two large, shallow baking pans. Bake, stirring occasionally, until golden brown (about 35-45 minutes.) Cool. Add

3 cups total various raisins (currants, golden, regular)
1 cup chopped dates
1 cup finely minced CALIFORNIA apricots (Trader Joe's)

Note: Most supermarket apricots are imported and are flavorless and too sweet. California apricots add a wonderful tart note. Don't be tempted to add dried cranberries, cherries, bananas, etc. You can end up with something that tastes more like trail mix than granola.
